Very few things bring people together as quickly as a cake does! For me personally, I bake & cook as a form of stress relief. There's something satisfying to me about mixing a bunch of seemingly unrelated things together to create something delicious. And if I can make something all my kids will actually eat, bonus!
Below is a recipe for this chocolate vanilla swirl bundt cake. I love a good bundt cake because they can stand alone without frosting. Don't get me wrong, I am not opposed to frosting but it's nice to have some sweet variety.
Ingredients
1 cup of salted butter room temperature (aka soft)
2 cups of granulated sugar
2 1/2 teaspoons vanilla
4 eggs
1/2 cup sour cream
1 1/2 teaspoons baking powder
3/4 cup whole milk
1/2 teaspoon baking soda
1 teaspoon salt
2 3/4 cup all purpose flour
1/4 cup chocolate chips
1/4 cup unsweetened cocoa powder
Preheat oven to 325 degrees F
Coat the inside of your bundt pan with cooking spray.
Pre-measure all your ingredients. I know, I know, this creates a whole bunch of extra dishes! But for this recipe I do recommend pre-measuring your ingredients into separate bowls. You can use the same little bowl for the salt, baking powder and baking soda. And you can add the vanilla into your cracked eggs too. The point is having everything ready to pour in as you mix.
Mix together the butter and sugar first (you can use a hand mixer or stand mixer, just make sure it is well blended and creamed together.)
Add in the vanilla, eggs, sour cream, baking powder, baking soda, and salt. Mix thoroughly until smooth.
With your mixer on low alternate in the flour and milk - mix until combined. You don't want to over mix on this step.
Stir in the chocolate chips.
Divide your batter in half and put half into another bowl. Mix in the cocoa powder to one bowl.
Alternate scooping heaping mounds of vanilla and chocolate batter into your prepared bundt cake pan.
Use a butter knife to swirl your batters together.
Bake for 60 minutes. (Check by inserting a knife or skewer into your cake and make sure it comes out clean).
Let it cool for at least 20 minutes before removing from your pan.
Viola! You can add frosting or powdered sugar but it is great on its own.
